Oreo Cheesecake Cups

16 Oreos
16 oz. Cream Cheese (room temperature)
2/3 cup Sugar
1 tablespoon Flour
2 Eggs

Line 16 muffin cups with paper liners. Separate Oreos into halves, carefully leaving one side with all the frosting. Put one of the filling topped cookies in each cup (frosting side up). Crush the remaining cookies and set aside.

Beat the cream cheese, Sugar, and eggs with electric mixer for 5 minutes. Spoon small amount of mixture in each cup (on top of cookie). Saving half of the crumbs for later, sprinkle half on the  crumbs on mixture in the cups. Use the remaining mixture to fill cups 1/4 inch from the top.

Bake at 350 degrees for 20-25 minutes or until knife stuck in center comes out clean. Let cool 20 minutes.

Topping:

1 cup sour cream
2 tablespoons Sugar

Beat ingredients. Spread on cupcakes and sprinkle with remaining crumbs.
